Equipment

  • cooker
  • dow
  • water

Ingredients

  • 100 g Active sourdough starter
  • 350 g Water
  • 500 g Strong White Bread Flour
  • 10 g Salt

Instructions

  • Mix the starter and water, then add the flour and salt. Stir until no dry flour remains (rough, sticky dough is fine). Cover and rest 30 minutes.
  • Stretch and fold the dough. Pull one side up and fold over itself. Turn bowl and repeat 3–4 times. Cover and rest 30 minutes. Do this 2–3 times if you can. If not, don’t stress.
  • Cover and leave at room temp 4–6 hours to rise. Dough should look puffier and slightly domed, not doubled.
  • Tip onto lightly floured surface. Fold into a round. Place seam-side down on baking paper or in a floured bowl.
  • Rest 1–2 hours at room temp or cover and refrigerate overnight (8–12 hours) for easier baking.
  • Heat oven to 230°C (with a heavy pot or tray inside). Score top. Bake for 20 min covered (or with steam) or 20–25 min uncovered until deep golden.
  • Cool at least 1 hour before slicing.

Notes
